FIVE-MINUTE MORNING PREP
Wash cilantro, wrap in
a damp paper towel,
and place in an airtight
container. Slice bell
pepper. Store cilantro
and bell pepper in
refrigerator.
PRO TIP
Soba is very starchy.
Rinse well under cold water after
cooking, and toss immediately
with sauce.
Instructions
Bring a large pot of water to a boil;
season to taste with salt. Add soba
noodles; cook according to package
directions. Drain, and rinse very well
under cold water. Place in a large bowl.
Whisk together peanut satay sauce,
6 tablespoons warm water, and
2 tablespoons oil in a small bowl.
Reserve ¼ cup sauce. Toss remaining
sauce with cooked soba noodles.
Heat a large skillet over medium-
high heat. Cut steak into pieces to
fit in skillet. Sprinkle salt and black
pepper on both sides of steak.
Add remaining 2 tablespoons oil
to skillet. Add steak; cook for 3 to
4 minutes per side. Remove from
skillet, and let stand on a cutting board
for 5 minutes. Cut against the grain
into ½-inch-thick slices.
Divide soba noodle mixture and bell
pepper among 4 serving bowls. Top
with steak, and drizzle with reserved
¼ cup sauce. Sprinkle with cilantro.
Serve immediately.
