stand at room temperature
for 30 minutes before baking.
Instructions
Preheat oven to 425°.
Cut squash in half lengthwise. Scrape
out seeds with a spoon. Drizzle cut
sides of squash with oil, and sprinkle
with salt and pepper. Place squash,
cut side down, in a baking dish.
Bake until tender and easily pierced
with a fork, about 30 minutes. Let
stand until cool enough to handle,
about 15 minutes. Pull strands in
squash with 2 forks, keeping skin
intact, until they resemble spaghetti
noodles. Place squash strands in a
large bowl, reserving squash shells.
Position oven rack 8 inches from heat
element. Preheat oven to low broil.
Add chicken, marinara sauce, half of
mozzarella, and oregano to squash
strands, stirring until combined.
Divide mixture among squash shells.
Top with remaining mozzarella.
Broil until lightly golden and bubbly,
about 6 minutes. Garnish with
oregano, pepper, and oil, if desired.
Serve immediately.
