Sausage-Stuffed Acorn Squash

shredded Parmesan cheese, fresh sage

Instructions

Preheat oven to 375°. Spray 2 (3-quart) baking dishes with cooking spray. Cook all sausage in a large skillet, breaking up meat with a wooden spoon, over medium-high heat until browned, 10 to 12 minutes. Add fennel, onion, and garlic; cook, stirring occasionally, until softened, 5 to 10 minutes. Remove from heat; gently stir in grated cheese, bread crumbs, and sage until combined. Arrange squash halves in prepared pans. Rub squash with oil, and sprinkle with salt. Divide sausage mixture among squash; cover pans with foil. Bake until squash is tender, about 1 hour. Uncover and bake until browned, 15 to 20 minutes more.

Garnish with shredded cheese and sage, if desired.
