Unless otherwise specified,
we use canned pumpkin
purée in our recipes so we
can add our own sweeteners
(like honey or brown sugar)
or change up the spices (like
cinnamon, nutmeg, ginger,
or cloves) to our liking. Plus,
pumpkin purée has a
neutral flavor, so it can be
used in both sweet and
savory recipes.
Instructions
Preheat oven to 250°. Line a baking
sheet with parchment paper.
Combine oats, pecans, pumpkin seeds,
and dried cranberries in a large bowl.
Whisk together brown sugar,
sorghum syrup, pumpkin, oil,
cinnamon, and salt in a medium bowl.
Pour sugar mixture over oats mixture,
and stir until combined. Spread in an
even layer on prepared pan.
Bake until deep golden brown and
fragrant, 45 minutes to 1 hour, stirring
every 15 minutes. Let cool completely
on pan.
Stir white chocolate chips
into cooled granola until evenly
distributed.
