Shrimp Creole Soup
If you like your soup hot (in more ways than one), try this Southern comfort food based on Shrimp Creole, a Creole-style favorite. Besides the fact that you’ll eat This Shrimp Creole Soup with a spoon rather than a fork, this dish is everything you expect from the popular New Orleans recipe with the same name. Pair the “trinity” of Creole ingredients — onion, celery, and bell pepper — with shrimp and tomatoes, and spice it up with Tabasco and cayenne. The addition of broth transforms it all into a soup. And bacon offers an extra savory element.

Include the juice from the can of diced tomatoes to give the broth of the soup a more prominent tomato flavor.
Instructions
Cook bacon in a large pot over medium heat until crisp.
Add onions, celery, bell peppers, and garlic; cook 4–5 minutes.
Whisk in flour; cook 2 minutes.
Stir in broth, tomatoes, lemon juice, Worcestershire, Tabasco, thyme, sugar, cayenne, and bay leaf. Simmer soup 10–15 minutes until thickened; season with salt.
Add shrimp to soup and cook 3 minutes more.
Whisk flour into the vegetable mixture, and let the floury taste cook off. It'll thicken the soup.
Add Tabasco sauce to spice up the soup. You can control how hot it is by adding more or less.
Shrimp get rubbery if overcooked, so wait to add them until the soup is nearly finished cooking.
