Instructions
Let dough stand at room
temperature for 1 hour.
Preheat oven to 450°.
Heat a cast-iron grill pan over
medium-high heat; add peaches,
and cook until softened, about
3 minutes. Remove from pan.
Brush a 14-inch cast-iron baking
pan with oil.
Lightly flour a work surface, and roll
dough into a 10-inch circle. Carefully
place dough on prepared pan. (Fold
dough over a rolling pin to transfer
to pan, if needed.) Press fingers into
dough to make indentations. Top
with prosciutto and peaches.
Bake until dough is puffed and crisp,
about 20 minutes. Top with goat
cheese and herbs.
Garnish with spicy
honey, if desired. Serve immediately.
